While cooking through As the Romans Do we have been trying to make one sweet recipe and then one savory recipe to balance things out. This recipe was appealing to me because it included polenta. I have never cooked polenta before, but my Mom and Dad make a cheesy polenta recipe that is delicious. I wanted to see what polenta was like cooked a different way so I chose this polenta sandwich recipe. My husband, Stephan was excited because it included sausage, and we were both on board with the melty cheese factor.
You cook the polenta, pour it into a dish, then allow it to cool a bit and set up. This makes the “bread” or outside portion of the sandwich.
The sausage is baked, then sliced.
The recipe said use Fontina, Provolone or Bel Paese so we chose Fontina. Since Stephan likes provolone on sandwiches I wanted us to try a different type of cheese. We couldn’t find Bel Paese in stores near us, so we went with Fontina.
Once the sausage is baked and sliced you cut the polenta into squares or circles and start loading the sandwiches. Polenta, sausage, cheese, and then another layer of polenta.
I think we may have sliced the sausage a little thick because the sandwiches started to fall over once all stacked up. We ended up just sticking a toothpick in each sandwich and it helped.
As you can see the toothpicks didn’t help completely, but they were easy to re-stack before plating.

Next time we will use a different cheese (watch the live taste test video to find out why) but this is a standout, delicious appetizer. It looks beautiful too!
