Recipe #1: Baked Pasta with Asparagus, Pancetta & Provola Cheese

The first recipe we chose was “Pasta al forno con asparagi, pancetta e provola,” aka “Baked Pasta with Asparagus, Pancetta & Provola Cheese.” The ingredients were simple and the recipe was very easy to follow.

I have eaten leeks before, but in all the cooking I have done, I have never cooked them myself. Let me just say they are so easy to cook and DELICIOUS! We will definitely be incorporating leeks into our dishes and meals in the future.

A stick of butter. Yes, a whole stick! Make sure to share this dish with friends and family. It is savory, but in the best way. Mmmm…

The one issue we had you can see below. We used exact measurements the recipe called for, but ended up with a smooth, more gravy-like consistency, not a liquid sauce like the recipe explains. It was smooth and not lumpy so it incorporated with the pasta just fine, but we think it may have needed more liquid than we used.

You were supposed to puree the leek and asparagus together to make a sauce, and again it was a thicker consistency than we expected. It was, however, still delicious and incorporated just fine!


Cheese! Of course, make sure to add the cheese!

The recipe called for pancetta, but it said you could use bacon instead. I highly recommend using pancetta for this recipe as we did though.

The topper of bread crumbs was such a good finishing touch! The recipe didn’t say to put the dish back in the oven to brown the bread crumbs and to be honest you don’t even need to. It gave the pasta a great texture, and left overs were so good! I would recommend this dish for families because it is easy to make, very savory and filling.
