Recipe #7: Mini Pizzas with Tomato Sauce

I will occasionally make some pizza dough at home for Stephan and I to make individual pizzas. The dough recipe I have been using for the past couple of years serves its purpose, but honestly is mediocre. I was excited to try this dough recipe and I can tell you it will be my go-to from now on. It is still just as simple as any other pizza dough recipe, but is so much better than the one I was using before. Needless to say we loved this recipe. I mean, it’s pizza… need I say more? 🙂

Honestly, if you have the opportunity to buy, or receive a Kitchen Aid mixer you will not regret it. The dough hook is so handy and if you make bread, even semi-regularly, it is the best kitchen appliance investment you can make! I use it for everything and I am so happy to have it.

Let it rest so it can rise.

Then roll it out with some extra flour.

I used a beer glass to make the rounds, but it would be fun to use a shot glass and make bite sized pizzas for finger food at a party.

The sauce is made of tomato sauce, olive oil and some dried basil. That’s it! So minimal, yet delicious!

You bake the rounds with the sauce for a bit, then pull them out of the oven and top with the mozzarella. Then, put back in the oven to melt the cheese and brown the edges a little.

Yummmmmm… That is all!

Needless to say they are AMAZING and we will be making these monthly if I have anything to do with it! 😉
